One of my all time favorite treats from the elementary school cafeteria was the chocolate pudding. It was a creamy chocolate delight that accompanied my chicken nuggets and soft pretzel so perfectly. It brightened my school day. Alas, my palette has changed over the years and I don't get that same joyful feeling when I see pudding. I feel it lacks flavor and depth. Quite honestly it doesn't even taste like chocolate. While it may still appeal to others, I need an alternative. I decided to create my own chocolate pudding with the flavors I love. I was inspired by the Real Simple Ultimate Chocolate Pudding and kicked it up a few notches by adding espresso and booze. What was a school favorite is now an adult indulgence.
The Ultimate Chocolate Pudding Kicked Up a Notch
{Adapted from the Ultimate Chocolate Pudding from Real Simple}
Ingredients
1/4 cup sugar
1/4 cup cornstartch
2 tablespoons unsweetened cocoa powder
2 tablespoons instant espresso
Pinch of kosher salt
1/4 cup Kahlua plus 1 teaspoon
2 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter, cut into pieces
3 ounces semisweet chocolate, chopped
1 teaspoon pure vanilla extract
Whipped Cream
2 tablespoons Kahlua
2 teaspoons sugar
1/2 cup heavy whipping cream
Directions
Set up a fine-mesh sieve over a medium bowl. In a medium saucepan, whisk together the sugar, cornstarch, cocoa, instant espresso and salt. Gradually whisk in the milk, Kahlua, and then the egg yolks. Cook the milk mixture over medium heat while whisking constantly until thickened to the consistency of mayonnaise (about 7 to 8 minutes). Continue to cook, whisking for 1 minute more. Remove from heat, pour the mixture through the sieve into the bowl. Add the butter and chocolate and stir until melted. Mix in the vanilla and 1 teaspoon of Kahlua.
Press a piece of plastic wrap directly on the surface of the pudding (so it doesn't form a skin) and refrigerate for at least 2 hours and up to 2 days. When serving the pudding stir it up and add the whipped cream.
Whipped Cream: Combine sugar, Kahlua, and whipping cream. Use an electric mixer or whisk and whip until the mixture forms soft peaks. Add it to the top of the pudding and enjoy.

HOLIDAY TREATS - EGGNOG BREAKFAST CRUMBLE CRUNCH CAKE
Every year I like to make little goodies for all to enjoy. Last year I went all out and made Glogg, Cranberry Vodka, Spiced Nuts, and an assortment of goodies (ginger cookies, the famous raspberry bars, chocolate/espresso cookie, and peppermint bark). This year my feet were dragging and I wasn't very inspired. I finally found some time to catch up on the blogs I follow and I was inspired! I found so many great treats to try but the standout was an Eggnog Breakfast Crumble Cake. Don't let the word breakfast fool you. This treat is good all day long. This crumble cake is moist, sweet, and is great with a hot cup of coffee. Perfect for the holidays!

PUMPKIN ICE CREAM
Ever since receiving my ice cream maker this summer I've been itching to try new and unique flavors. Being fall and all I thought it would only be appropriate to seek out a Pumpkin Ice Cream. My search for a pumpkin flavored ice cream led me to the David Lebowitz website. Unfortunately, I am a little lazy and didn't follow the recipe exactly. I didn't bother going through the trouble of purchasing and grinding my own fresh spices. I just used good old McCormick Spices I had on hand. I also didn't create my own pumpkin puree. I just used the reliable Libby's. Gotta love when the tricky stuff is already done for you... why put yourself through the trouble? Am I right? Any who, the results were great! The creamy ice cream tastes like cold pumpkin pie minus the crust. However, if you are craving that crunch all you have to do is sprinkle on some graham crackers or some nuts. If you are a pumpkin lover I highly recommend this delectable treat. It's a great idea for the holidays and you can make it ahead of time!

PEANUT BRITTLE and VANILLA ICE CREAM
As I awaited Irene's overnight visit this Saturday, I decided to keep myself busy with a new challenge - Peanut Brittle. Considering my candy thermometer is tucked away in a storage facility I am not sure why I thought this was in intelligent time to venture into the world of sugar boiling, but miraculously I was able to gauge the appropriate time and temperature with the help a meat thermometer (please note the thermometer's highest temperature was 75 degrees colder than the maximum temperature suggested in the recipe, plus I halved the recipe so all times were significantly shortened - there was some serious guess work going on). One part estimation to two parts dumb luck seems the perfect recipe for success... next time I'll unpack my thermometer to be safe though.

But I didn't stop there. What would go well with the crispy, salty-sweet treat? Cold and creamy vanilla ice cream of course! I made a basic custard compliments of David Lebowitz, froze the concoction and voila, a perfect post hurricane dessert for Sunday.

STRAWBERRY & MASCARPONE GRANITA
You may think strawberry with mascarpone Cheese... Yuck! Well, don't be so quick to judge. This indulgence has the texture of a frozen Italian ice, which means it should be scraped, not scooped. The mascarpone cheese gives it a creamy strawberry creamsicle taste that melts in your mouth. Don't let the name fool you, it does not taste like cheese at all. Another bonus is it is actually made with REAL ingredients. Real strawberries, all natural mascarpone cheese, fresh mint, and sugar. Children and adults will enjoy this healthy alternative to ice cream. I believe if you enjoy fruity sorbets you would enjoy this strawberry delight.

ESPRESSO ICE CREAM - HEAT WAVE HEALER
HOT... HOT... HOT... Heat Wave!
The only thing you can possibly do during this excessive heat is eat ice cream! It is a tough job but you gotta do it! One of my birthday presents this year was a brand spankin' new ice cream maker. So what did I do? I made ice cream! If you love coffee and you love ice cream then this is the ideal ice cream for you. You will LOVE it. The espresso, kahlua and chocolate covered espresso beans make for a decadent treat. I will admit it takes a little bit of time. You need to create a custard and cool it before you are able to use the ice cream maker. I made the custard the day before and whipped it out today for a cool treat. Warning, it is more filling than you think. I hope you try this because it is well worth the treat!
So... cool down and perk up with some homemade Espresso Ice Cream!
